Broccoli & Sweet Potato Soup

Get your kids to eat their vegetables with this delicious soup!

  • 1L Campbell’s Real Vegetable Stock
  • 1 brown onion, chopped
  • 500g broccoli, chopped
  • 500g sweet potato, peeled & chopped
  • greek yoghurt, to serve


  1. Toss onion, broccoli, and sweet potato into a saucepan over medium heat and cook for 5 minutes or until the onion is cooked and golden.
  2. Add 2 cups of water and 1 litre of Campbell’s Real Vegetalbe Stock to the pan and bring to the boil. Reduce heat and simmer for 15 minutes or until sweet potato is cooked through and tender. Set aside to cool slightly.
  3. Use a stick blender to blend until smooth. Season with salt and pepper to taste. Serve topped with greek yoghurt. Optionally top with toasted seeds/nuts to add crunch.
